<p>Nisheeth Tak started at Saagar on Harcourt Street, then managed Poppadom in Rathgar, before moving to the superb Jaipur on South Great George's Street.  Vermilion, his first venture as a proprietor, is a delight.  Ignore the location - all too typical (above a pub in Terenure).  Inside?  Comfortable, spacious, stylish.  The menu is Indian fusion - lots of classics, alongside off-beat treats like duck rolls and Goan Vindaloo - using fresh ingredients and prepared with real passion.  Presentation is a happy mix of traditional and contemporary: crisp white tablecloths and napkins, sparkling silver and glassware.  The service is excellent, and prices are cheaper than you might imagine - always a good thing.  All in all, the best ethnic restaurant in Dublin today.
