CARROT AND COCONUT RELISH
Ingredients
500g carrots
100g dessicated coconut
10 curry leaves
1 tablespoon mustard seeds
sugar to taste
60ml salt
Oil
Method:
Wash, peel and grate carrots. Heat oil in a pan, add mustard seeds and when they crackle, add the curry leaves. Pour this over the carrots. Add the remaining ingredients to the carrots and mix well. Check salt. Serve chilled
